From the rolling hills of Molino Norte in Matagalpa, this medium roast captures the artistry of Nicaraguan coffee farming. Grown by smallholder farmers at 900–1,590 meters in mineral-rich clay soils, the Yellow and Red Catuai, Catimor, and Parainema varietals flourish under a perfect balance of mountain sun and cool breezes.
After being fully washed and fermented for 12–14 hours, the beans are carefully dried on patios and raised beds, resulting in a clean, complex profile. The cup opens with silky cocoa, blooms into delicate floral notes, and finishes with a lively burst of citrus tones.
